Özet

Hygiene is an important topic which must not be underestimated through the processing of fish and fishery products. Any personnel who takes part during the processing cycle must be educated about hygiene so that health of the consumer will be avoided from any risk. These rules for hygiene are to avoid any harmful microorganism or any agent that has the risk of carrying desease to get in contact with the processed material. Applying these rules are bound to the laws. Application of these technical and lawful hygiene rules at the local fish markets and the grand marketplace in Istanbul has big effects. In this study; the hygiene problems of Istanbul seafood whole market were investigated by questionnairing over a hundred working personnel with 30 questions. The relation with education level and application of the hygiene rules is revealed. Required measures which are needed to make all the necessary applications of hygiene are pointed out. The study also revealed that the problem is not about the lack of hygiene rules but it is about the lack of educated personnel and lack of government presence.
