Papaver somniferum, known as 'poppy (EN), haşhaş (TR)', is a medicinal plant whose seeds have been used traditionally in Turkiye for nutrition since the past, and its capsules are used for miscellaneous purposes such as sedatives, pain killers, and cough suppressants. Currently, it is extremely common to utilize milk derived from plants for both food and medication. In addition to the health problems associated with drinking milk of animal origin, such as lactose intolerance and allergies to milk proteins, the consumption of milk of animal origin has significantly decreased in recent years as a result of people choosing not to drink milk of animal origin, and the propensity to drink milk of plant origin has increased. In this study, P. somniferum white and black seeds were collected from Afyonkarahisar(Başmakçı), and milk powder of the seeds was obtained using a different method for the first time. The seeds were homogenized with a mixer and the powder was prepared with a Spray dryer system at 150°C. The total phenolic and flavonoid amounts of the powders were determined, and their antioxidant activities were performed by DPPH, ABTS and CUPRAC methods. According to the results, black poppy has the richest flavonoid content. Although a sufficient antioxidant activity has not been determined yet in poppy milk powders, the literature data show that poppy have high antioxidant activity. Thus, the high temperature used during the production of milk powder might affect the antioxidant activity results, and different methods such as using the lyophilization method during the obtention of milk powder were added to the study. In this project, it is aimed to increase the scientific importance of poppy seeds and to introduce new herbal milk to the market by creating a nutraceutical product with high phytochemical content in an easy-to-use form as well as local uses.
