Artificial Intelligence (AI) is becoming increasingly relevant in tourism and hospitality education (T&HE), yet research on its pedagogical and institutional implications remains limited. To explore this emerging field, a bibliometric analysis of 50 journal articles published between 2021 and 2025 was conducted using Scopus and Web of Science data. The co-occurrence network revealed six thematic clusters. Cluster 1 – Pedagogical Foundations & Curricular Integration highlights curriculum design, assessment, and academic integrity in relation to AI tools such as ChatGPT. Cluster 2 – Student-Centered Challenges & Outcomes focuses on learner perceptions, adoption risks, and cognitive impacts. Cluster 3 – Competency & Workforce Orientation emphasizes digital literacy, ethics, and preparing students for AI-driven workplaces. Cluster 4 – Attitudinal & Theoretical Framing introduces initial theoretical perspectives, while Cluster 5 – Inclusive and Adaptive Learning addresses accessibility and personalized systems. Finally, Cluster 6 – Futures-Oriented Pedagogies explores emerging skills such as critical thinking and adaptability. Findings indicate that research in this area is expanding but remains uneven, strongly pedagogical in focus, with limited theoretical depth and inclusivity. Future studies should move beyond descriptive bibliometrics and incorporate systematic and qualitative approaches to better capture how AI empowers pedagogy, institutions, and learners in T&HE.
